Ingredients
175g plain flour
1 tsp baking powder
75g butter, chilled and diced
75g soft brown sugar
1/2 tsp vanilla essence
1 large egg
8 tsp jam
- Preheat the oven to 220/Gas 7. Line a baking tray with baking parchment. Sift the flour and baking powder into a mixing bowl. Rub in the butter until the mixture resembles coarse breadcrumbs. Stir in the sugar.
- Beat the vanilla essence and egg together and stir into the flour mixture to form a stiff dough. Spoon the dough onto the baking tray to make eight rough mounds.
- Press your thumb into the middle of each mound to make a dip, then spoon a teaspoon of the jam into each.
- Bake in the oven for 12-15 minutes. Leave to cool on a wire rack and serve.
